  • What sterols are in amaranth seeds?
  • Sterols are probably the most important minor components, and constitute the majority of the unsaponifiable matter of most vegetable oils. As shown in Table 4, the dominant sterol in amaranth seeds was ¦Â-sitosterol, followed by ¦¤7-avenasterol. The contents of the two first dominant sterols were not significantly different in the two oils.
